Slow Roasted Tomatoes

We are HUGE fans of tomatoes in or house.  Love them in any shape or form.  This slow roasted tomatoes recipe is one we demolish about once a week as its is SO damn simple and tasty.  I typically put them on around 4.30ish when I am starting to prepare the toddlers dinner.  By 7(ish) when we sit down to eat they are perfectly cooked, the house is full of DELISH aromas and dinner is (in our case) 1/3 of the way cooked!  When I say 1/3 done it's because we usually eat this with grilled asparagus and steak.  Turn on the BBQ and 10 - 15 minutes later your dinner is cooked! Keeping it simple

As you may have read when I cook at home my goal, now that we have a toddler and don't get out as much is to try provide my beautiful wife with some restaurant quality meals.  Alongside this I don't want to spend HOURS in the kitchen.  Granted this slow roasted tomatoes recipe does take hours to make BUT it only takes 5 mins to prep.  Then you just leave them cook slowly until dinner time!  All you need is some delicious (in season) roma tomatoes, olive oil, balsamic vinegar, salt & pepper.  My slow roasted tomatoes recipe has added a few extras that if you have in the house are worth using BUT in the interest of trying to keep it simple you can just use those ingredients.

Tools of the trade

When writing these recipes I like to write a list of "essential" tools (see recipe below) that you need.  That way you can have everything at hand to begin with in the hopes that you get to sit your ass down as quick as possible to eat and then to the couch for relaxation.  Sorry, I mean have meaningful conversations!! Here are a few links of things I use to make this recipe.

I have had my global knives for about 12+ years now.  With a little love and care good quality knives will last you.  You may think they are too expensive and that the $20 set you can get at the local Kmart/Target will do the trick.  The benefit of good knives are 1. Less accidents will happen with sharp knives and 2. They will last a LOT longer so save you in the long run.

My BBQ!  I can't get enough of my weber.  Granted I live in QLD where it's sunny all the time so we BBQ 5 - 6 days a week.  BUT my parents who have a habit of buying too much things they don't need live in Ireland and bought themselves a weber after visiting.  Since buying it they have said that they BBQ weekly in Ireland compared to monthly at best before.  PLUS the more you BBQ the less cleaning up in the kitchen to do!

Sheet pans. These fellas are essential.  I use them in many ways.  No dirty comments necessary!  They are perfect for leaving meats on when marinating.  I use them to rest my meats on after cooking so my chopping board ain't covered in juice.  Great for roasting in the oven - OH that's right we are doing a slow roasted tomatoes recipe!!  They keep really well and are relatively inexpensive too.

Ingredients 

  • 5 roma tomatoes cut in half
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch cracked black pepper
  • 1 tbsp balsamic vinegar
  • 1 tsp chili flakes optional
  • 2 sprigs thyme

Instructions

  • Place greaseproof paper onto baking sheet and lay tomatoes (cut side up) on tray
  • Drizzle with oil and balsamic and then sprinkle rest of ingredients on top
  • Roast in oven @ 100c for 3hrs *see tips*

Tips/Tricks

  • for extra INTENSE flavour you can roast the tomatoes at a lower temperature for longer.  For us it's the timing that wins everytime.  Pop em in when the kid eats and the timing is perfect!
  • you can use other tomatoes too.  I like the shape and taste of the roma ones.  Infact I made a delicious chutney slow roasting cherry tomatoes - HERE
