It wouldn't be an Aussie brekkie with out some form of avocado on the menu!! My take on the smashed avo is with beautifully soft poached eggs, bacon, grilled baby broccoli and some homemade pistachio dukkah. Hungry? Well read on my friend!
I have never eaten so much avocado since I moved to Brisbane! Don't get me wrong I have always liked avocado but over here it almost feels like it should be a national emblem. Or at least a giant statue of it erected in every state! The funny thing about it is they aren't the cheapest to buy over here. Their shelf life isn't great and they oxidize very quickly if not eaten straight away. But boy do I love a good smashed avo brekkie! What is it that makes them so damn popular?

Brunch & Mornings
When we lived in Ireland and NYC we used to call it brunch. You know that thing you ate at the weekend as you pulled yourself out of bed after too many drinks. Or maybe it was just because it was the weekend and you didn't have to set an alarm or be anywhere at any particular time. Restaurants/Cafes wouldn't even open until 9am(ish) and in NYC most "cool" places opened somewhere around 10/11am. This defo mean't it was closer to lunch than brekkie.
Well, I can tell you one thing my life has changed HUGELY! Since moving to Australia we have been getting up between 5.30am-6.30am. Two reasons. 1. We have a child so all parents reading this can relate to it. BUT 2. The sun rises so early here so people are awake so early. To put it into context most of the local coffee shops open at 6am. What's even crazier is people are in them and they are all cheery! WTF..............
Sun Comes Up
Truthfully though I am a morning person. Well kinda. I like being up early but I ain't always the happiest in the morning time. To make matters worse I don't drink coffee. I know, I know. What's wrong with me!! So with our darling princess shouting it's time to get up as soon as the "sun comes up" and people up and out already we have become less of a "brunch" lover and more of a "breakfast lover". Now, the sun coming up is a funny story.
Gro Clock
For those of you who have an issue of your child waking early and want a few extra minutes peace I would THOROUGHLY think about investing in a Gro clock Sleep Trainer. It's the business. Princess O used to wake around 5.30am and be shouting until we came in. Since buying said Gro clock Sleep Trainer and setting it to a "slightly" more normal time. We get to stay in bed to the whopping hour of 6.30am. Basically you set the time for X o'clock and tell the toddler that they can't call Mummy or Daddy until the "sun comes up". At first it was a bit of a struggle but after about 10 days to 2 weeks she slept until exactly 6.30am. Well, she may have been awake but I didn't care as she was silent. MONEY WELL SPENT!
Christmas & Smashed Avo
Over the Christmas period I decided to make a few brekkie dishes for the family so we could kick start our days off for ENDLESS toddler activities. This was one of the ones I did and it was a HUGE hit with everyone. I made the eggs in advance. Put a load of bacon on a sheet tray in the oven on low so I wouldn't have to slave over a hot stove and then all I had to do was grill some broccoli while Mrs AnotherFoodBlogger did some smashed avo with the princess. I ran up to the local coffee shop and got a long black for the "immediate boss" and a babychino for the "CEO". Yep, you read it right they were open for a few hours making coffees!
I hope that this inspires you to get in the kitchen soon and whip up some food for your family/friends. Follow my simple step by step recipe below and you will be eating a brekkie of delicious smashed avo in no time.

Ingredients
- 1 avocado
- 2 eggs
- 2 slices sourdough
- 2 tsp pistachio dukkah
- 2 slices bacon fried
- 1 wedge lemon
- 1 pinch salt
- 1 pich pepper
- 1 bunch stemmed broccoli
- 1 pinch maldon salt optional
Instructions
Soft Boiled Eggs
- Boil water in a medium saucepan. Add eggs gently into pan and set timer for 6.5 minutes. When cooked remove from water and place in ice cold water straight away *see tips*
Avo on Toast
- Cut avocado in half and remove from skin. Place in bowl with a little lemon juice, salt & pepper. Roughly smash using a fork. You still want a few chunks so don't go too crazy
- Rub stemmed broccoli in olive oil, salt and pepper and grill on bbq or grill pan for 3 - 4 mins.
- Drizzle cut sourdough in oil and grill on bbq or grill pan until toasted.
Serving
- Place smashed avo on top of grilled sourdough. Add eggs, broccoli & bacon on top of avo and spoon the dukkah over the top. Finish with some maldon salt and a squeeze of lemon and ENJOY!

Tips/Tricks
- the eggs can be made in advance so why not boil them the night before when making dinner so that it speeds up the brekkie process when everyone is tired and HANGRY!
- i do the eggs for 6.5 minutes which gives a 1/2 runny & 1/2 cooked yolk. Add 30 seconds either side for a little more or less cooked.
- make the avo as close to serving as possible as the avo tends to discolour when removed from it's skin. The acid in citrus not only makes it taste better but slows this process down.
- you can poach or fry the eggs as an alternative but i find the beauty in soft boiling them is you can make plenty in advance so it helps you serve it faster to your guests

This looks very interesting, I am not a person that loves avocado except for when it is made into guacamole but I am willing to give this one a try without the bacon of course seeing that I am vegetarian.
I have never head the avocado on toast that everyone raves about. I do love eggs on toast and I like avocado so I don't see why I don't try them together.
