Weekly meal planning can be a pain, but cooking it after a busy day can also be a pain! This simple ginger miso salmon dish can be cooked on the table in less than 30 minutes. Bonus points for how damn tasty it is too 😉

I'm pretty sure we are nailing the brief on the ginger miso salmon dish but why not make a little extra and enjoy it cold for lunch the next day too!
How To Make Miso Ginger Salmon
The think that makes this dish so damn good is its simplicity! Imagine all you need is 10 ingredients of which (depending upon your pantry) at least 4 are pantry staples! The rest, are all available at your local grocery store.
Whisk up the dressing ingredients and pour 1/2 the mixture on top of the salmon. If you can, leave for a minimum of 1hr (the longer the better) but, if you are in a rush, then you can cook immediately!
Cook up some rice and boil some greens in salted water - does it get any easier for a delicious and healthy miso ginger salmon dish? I think not!
Wine Pairing
When it comes to creating recipes I always have a wine in mind! This one works AMAZINGLY with Zontes Footsteps Dawn Patrol Pinot. Finding a pinot this good for that price is like finding a unicorn 😉
Zontes Footsteps have a sizeable portfolio of classic Australian varieties but also some fun ones you would see more from the European market. They are based in the Mclaren Vale but use grapes from Barossa, Langhorne, Adelaide Hills and places a little further afield. Their packaging is fun, but we all know it's what's in the bottle that counts, and boy, do they back it up. Whether it's a midweek quaffer to an arvo rose or something a little fancier for Saturday night, they tick many a box!
Now, onto the wine in question. The miso ginger salmon and Dawn Patrol worked perfectly together. Salmon has enough body or meatiness to stand up to pinot, but Dawn Patrol has succulent, smooth tannins with delicious fruit and spice notes, so everything just works in harmony. Trust me when I say—get yourself a bottle, cook up the best miso ginger salmon dish you've had, and enjoy a relaxing night in!

Ingredients
- 4 skin off salmon fillets approx. 2-250g
- 2 bunches Asian greens - pak choy, bok choy or Chinese broccoli
- rice
- oil
- salt
Marinade/Sauce
- 4 tbsp white miso
- 1 tsp ginger
- 4 tbsp rice vinegar
- 4 tbsp mirin
- 4 tbsp honey
Essential Tools
- Chef Knives
- Chopping board
- mixing bowl
- Ovenproof dish
- saucepan
- Rice cooker or 2nd saucepan
Instructions
- Mix all marinade ingredients together
- Marinate the salmon in 1/2 of the mixture
- Bake salmon @ 200c in an ovenproof dish for 13-15mins
- Cook rice as per instructions on packet
- Boil Asian greens for 2-3 minutes in salted water, drain and toss in some of the remaining dressing
- Serve dish with a spoon of rice, Asian greens and miso salmon on top – drizzle a little dressing over to finish!
Notes
Tips/Tricks
- I recommend marinating for minimum 1 hour but the longer you can the more intense flavour you will be.
- The salmon can also be eaten cold in a salad or as part of a poke bowl too.
- Can’t get Asian greens? Then substitute pan-fried green beans, asparagus or even grilled broccolini instead.

Salmon is such a great dish to make when you are tired and/or in a hurry. I always bake mine where possible. Ginger and miso sound like delicious flavours too. Sorry this sounds so AI but it's really me 🙂
