Caesar salad is my all-time favourite salad!  Anyone who reads my blog has probably recognized I am a fan of anything between 2 slices of bread too.  It was only natural that putting a caesar salad inside of a burger bun was simply the right thing to do.  I give you my delicious chicken caesar sandwich.  The BEST thing about this is..........when we are feeling v lazy, had enough of toddlering and wanting to hit the couch ASAP this is one of the dinners we turn too.  No cutlery required, no table necessary and flavour overload to boot.

Why Caesar Salad?

So, I was never a big caesar salad fan.  Truthfully I would very rarely order salads from anywhere.  After moving to NYC and there being these amazing delis on every corner.  Truth be told I was apprehensive at getting food from them at first.  After a small, while it was evident that living in NY it was virtually impossible to not get food from them.  I went with the "fresher" option and but was my MIND BLOWN.  The salad options were unreal, I had never seen anything like it before.  Any topping you could imagine was available and with a few swift tong grabs and a squeeze of your dressing you had the perfect salad.  $7.99 later, and it was probably the best value in NYC (in my opinion).  I was converted - caesar salad was on my weekly menu and I was loving it.

Daintree Rainforest

Chicken Caesar Sandwich

My parents were over from Ireland a while ago and we took a family trip, trip, trippity, trip to Port Douglas to visit Daintree and surroundings.  Having a 2.5-year-old meant that wandering around the rainforest as a group was tough so there was many you take the car and we take the car days.  Not gonna lie I'm sure it benefited everyone to have some peace.  When was the last time you spent 1 month solid with your parents??

Anywho - Mum and Dad did the trip to Daintree first.  They seemed to enjoy it BUT the highlight was 100% WHET cafe!!  After driving around a stunning part of the country they couldn't speak highly enough of their lunch in WHET.  Good honest food was the main descriptor.

So, when we hit the rainforest it was only natural that we tried out WHET for lunch ourselves.  Dad was right - it as good honest food!  I had eaten chicken caesar sandwiches before (and made them) but this one was UNREAL.  It was simply delicious and had me craving them again.  Since then we have been eating them on a weekly basis.  Well played, WHET, well played!!

Homemade Sauce v Shop Bought

Making homemade is defo my favourite way to go with this chicken caesar sandwich.  Homemade aioli or salad dressing is way easier than you think to make.  Check out my aioli recipe HERE.  Use this base recipe and add some Worcestershire sauce and anchovies and you are pretty much there.  Alternatively, you can use mayo and add the necessary ingredients which is kinda homemade - cheats version!  I'll put the different ways below to make it and choose which suits your needs best.  I would be lying if I said there wasn't a bottle of caesar dressing in my fridge BUT I've also always got the rest of the ingredients if I have a few extra mins to make my own!

 

Wine Pairing

What's dinner without wine?  Well, it's technically still dinner but it defo ain't as good a dinner 😉  This mighty chicken caesar sandwich deserves an equally good wine to sip (before), with (and after) it.  I've chosen a Santa & D'Sas Chardonnay from the Yarra Valley for this one.  Rated highly by Mr Halliday this delicious drop is on sale at winedirect.com.au at $32 a bottle - normally $45.

This is both a drinker and a keeper!  I enjoyed one (or 3) glasses of this the other night with my sandwich but can also see this one getting better and better over the next 5 years or so.  It's got some delicious floral notes, white peach and grapefruit too.  At first, I felt the grapefruit was a little too prominent but after it had time to breathe it balanced out nicely.  Creamy, nutty with some delicious lees notes too.  Defo a wine to get at least 3 of and at that discount why wouldn't you?

Ingredients 

Chicken Marinade

  • 2 tbsp lemon juice
  • 1 clove garlic crushed
  • 2 tbsp olive oil
  • salt
  • pepper
  • 1 tsp oregano

Chicken Sandwich Accompaniments

  • 2 chicken breasts butterflied
  • 2 burger buns
  • baby gem lettuce
  • 4 slices bacon
  • 2 soft boiled eggs
  • parmesan cheese

Homemade Caesar Dressing

  • homemade aioli
  • 6 anchovy fillets chopped
  • 2 tbsp grated parmesan cheese
  • 1 dash worcestershire sauce

Cheats Dressing

  • 2 tbsp mayo
  • 1 clove garlic crushed
  • 1 dash worcestershire sauce
  • 2 tbsp grated parmesan cheese
  • 6 anchovy fillets chopped
  • 1 tbsp lemon juice
  • 1 tsp dijon mustard

Instructions

Dressing

  • Follow my aioli recipe and add the cheese, worcestershire and anchovies to it OR using the cheats method jus mix all the ingredients in a bowl!

Sandwich

  • MIx all the marinade ingredients together and place in a ziplock bag with the chicken and marinade for minimum 30 minutes
  • Grill the chicken on BBQ or grill pan for 2 - 3 mins each side or until cooked, meanwhile cook the bacon too.

Sandwich Assembly

  • Toast burger bun, place some dressing on the base and add the lettuce next. On goes the chicken, the the bacon & egg. Great a healthy amount of parmesan on top and finally some more dressing. Oh, and the other 1/2 of the bun too!

  • BBQ/Grill pan
  • chopping board
  • sharp knives
  • ziplock bag
  • tongs
  • mixing bowl
  • whisk

Tips/Tricks

  • for soft boiled eggs I place my eggs in boiling water for 6.5 minutes and then place them in ice cold water immediately to stop the cooking.  If you like your eggs a little harder then 7.5 minutes is about long enough!
  • often if the chicken breasts are quite large I will use just one breast for 2ppl and butterfly it
  • homemade caesar dressing will keep for 3 - 4 days in the fridge so why not have a caesar salad later in the week too!
