Crust
- 113 g unsalted butter room temp
- 60 g castor sugar
- 132 g plain flour
- 1 pinch salt
Curd
- 4 eggs
- 2 tbsp lemon zest approx 4 lemons
- 88 g plain flour
- 420 g castor sugar
- 160 ml lemon juice approx 4 lemons
Crust
Combine butter and sugar and mix together in food processor
Add flour & salt and combine
Flatten mixture into pre-lined baking dish and bake for 15-20 minutes and crust is slightly brown around edges *see blog post above*
Allow to cool completely
Curd Mixture
Whisk together all ingredients insuring there are no lumps
Pour mixture on top of cooled crust and bake in the oven for 30 - 35 minutes *see blog post above*
Allow to cool completely *see blog post above*
Dust with icing sugar and cut - DEMOLISH!!
