Ingredients

Crust

  • 113 g unsalted butter room temp
  • 60 g castor sugar
  • 132 g plain flour
  • 1 pinch salt

Curd

  • 4 eggs
  • 2 tbsp lemon zest approx 4 lemons
  • 88 g plain flour
  • 420 g castor sugar
  • 160 ml lemon juice approx 4 lemons

Finishing

  • icing sugar for dusting

Instructions

  • Preheat the oven to 180c
  • Butter a 6' x 9" baking dish. Line it with parchment paper and set aside

Crust

  • Combine butter and sugar and mix together in food processor
  • Add flour & salt and combine
  • Flatten mixture into pre-lined baking dish and bake for 15-20 minutes and crust is slightly brown around edges *see blog post above*
  • Allow to cool completely

Curd Mixture

  • Whisk together all ingredients insuring there are no lumps
  • Pour mixture on top of cooled crust and bake in the oven for 30 - 35 minutes *see blog post above*
  • Allow to cool completely *see blog post above*
  • Dust with icing sugar and cut - DEMOLISH!!
