Teriyaki Sauce

  • 1 tsp ginger grated
  • 2 cloves garlic crushed
  • 3 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp mirin
  • 1 tbsp olive oil


  • 250 g salmon skin off
  • 150 g peas
  • 1 knob butter
  • 2 tbsp oil
  • 4 - 6 slices crusty bread
  • sushi ginger
  • sesame seeds
  • pea shoots


  • Place all teriyaki sauce ingredients together and marinade salmon in it for 10 - 30 minutes. Heat oven to 180c
  • Meanwhile make the peas by adding them to saucepan with butter and a couple tbsp of water. Cook for 3 - 4 minutes on medium heat and crush with potato masher.
  • Heat an ovenproof frying pan on medium heat. Add 1 tbsp olive oil and place salmon (without marinade) into pan. Cook for 3 minutes on one side and flip. Cook for a further minute and add teriyaki sauce mixture
  • Spoon sauce over salmon and place in the oven for 5 minutes. Remove from oven and set aside.
  • While salmon is in the oven drizzle the bread with oil and grill it until golden brown.


  • Place spoonful crushed peas onto toast and add some bite sized chunks to the top. Add a couple pieces of ginger, sprinkle with sesame seeds and drizzle with pan sauce. Artfully drop the peashoots on top and bask in the glory that is your creation!

  • the longer you leave the salmon in the marinade the longer it will soak up the flavours of the teriyaki sauce. Truthfully though with this recipe 10 - 30 minutes is sufficient.
  • be careful when adding the marinade to the frying pan as it will spit up a bit
  • once the marinade is added cook the salmon in the oven.  If you continue to cook on stove top it will only burn.
  • you can use the same recipe for chicken too.  Just either cut the chicken into bite sized pieces so that it cooks quicker or add the sauce at a later stage so that it doesn't burn.
  • if you want to use the sauce as a glaze to brush over grilled meats then reduce it slightly in sauce pan and use a brush to paint the meat/veg.
